In my constant endeavor to make the food my family eats healthier, quicker, and more cost-effective, I’m always on the lookout for a “kitchen win.” Some time ago, a friend shared a muesli recipe that sparked a bit of an obsession. After a few twists and turns on my muesli-making journey, I’ve perfected a method that is quick to make, but does not compromise on nutrition.

While the original inspiration didn’t come with exact measurements, I’ve locked down the ratios that we enjoy for a golden, crunchy finish. The beauty of this recipe is its versatility—use these quantities as a guide, but feel free to experiment and make it your own!

The Ingredients:

Rolled Oats 4 Cups
Raw Almonds (Roughly chopped)1 Cup
Pumpkin Seeds ½ Cup
Sunflower Seeds ¼ Cup
Sesame Seeds ⅛ Cup
Coconut Sugar 4 tbsp
Honey 1 tbsp
Cinnamon To taste
Cranberries Handfuls (to finish)
Coconut Flakes (Sulphate-free)Optional

Method:

1. Prep the Mix: Combine the oats, chopped almonds, pumpkin seeds, sesame seeds, sunflower seeds, and coconut flakes in a large bowl.

2. Melt: In a large pan, melt the coconut oil over low heat.

3. Coat: Add the dry mix to the pan. Stir thoroughly to ensure every grain and nut is lightly coated in the oil.

4. Sweeten: Add the coconut sugar and honey. Keep stirring to distribute the sweetness evenly.

5. Spice: Sprinkle in your cinnamon and give it another thorough toss.

6. Toast: Increase the heat slightly. Continue to stir regularly until the mixture is golden brown and smells toasted.

7. The Finish: Turn off the heat and sprinkle over the cranberries. Let the mixture cool completely in the pan.

8. Store: Once cooled, transfer to a glass Consol jar to maintain that perfect crunch.

Pro Tip: Don’t add the cranberries until the very end! If they cook in the pan, they turn hard and overly chewy. For the best flavor, use organic, non-deodorized coconut oil.

Serving Suggestion: This muesli is incredible with dairy-free ButtaNut yogurt and fresh fruit.
