Toasted Nut & Seed Muesli: The Ultimate Make-Ahead Breakfast

As a mom, I’m always looking for ways to nourish my family with wholesome, healthy foods. But let’s be honest—I also love quick, stress-free solutions! Over the years, I’ve found that the absolute best way to conquer busy mornings is to prep breakfast ahead of time.

For us, overnight oats and homemade muesli are the ultimate lifesavers. They are incredibly easy to customise, making it simple to keep things dairy-free, wheat-free, and refined sugar-free—a massive win for a family navigating food allergies like ours.

This toasted seed muesli is crunchy, naturally sweet, and packed with protein, guaranteed to make your mornings run just a little bit smoother.

Ingredients

The Sweet & Sticky Binder

  • 2 tbsp Organic cold-pressed coconut oil (use the unrefined type for that delicious coconut aroma!)
  • 5 tbsp Coconut sugar
  • 1 tbsp Raw honey
  • 1 tbsp Creamy almond butter
  • 1 scoop Pea protein powder
  • A generous sprinkle of ground cinnamon

The Crunch Base

  • 5 cups Rolled oats (ensure certified gluten-free if wheat-free is a strict requirement)
  • 1 ¼ cups Raw almonds, roughly chopped
  • ¾ cup Pumpkin seeds
  • ⅛ cup Sesame seeds
  • ⅛ cup Sunflower seeds
  • ¼ cup Dried cranberries *optional* (add these at the very end!)

Step-by-Step Instructions

  1. Prep the Base: In a large mixing bowl, toss together the oats, chopped almonds, pumpkin seeds, sesame seeds, and sunflower seeds until well combined.
  2. Melt the Base Oil: Place a large, deep pan over low heat and melt your coconut oil.
  3. Coat the Oats & Seeds: Add the oat and seed mixture directly to the pan with the melted oil. Turn the heat up just a tiny bit (medium-low) and give everything a good stir to ensure the dry ingredients are lightly coated.
  4. Build the Flavour:
    • Sprinkle in the coconut sugar and stir.
    • Drizzle in the honey and stir thoroughly.
    • Add a warm shake of cinnamon and stir.
    • Dollop in the almond butter and stir until it melts into the mixture.
    • Sprinkle the protein powder evenly over the top and give it one more thorough mix.
  5. Toast to Perfection: Keep the mixture on the stove, stirring regularly at short intervals. You want to give the seeds and oats enough time to lightly toast without burning. Pro Tip: If the mixture seems to be browning too fast, turn the heat down immediately. Keep stirring until everything is beautiful, golden, and fragrant.
  6. The Finishing Touch: Remove the pan from the heat. Stir in your dried cranberries while the mixture cools. Let the muesli cool completely (it will get much crunchier as it cools!) before storing it in an airtight jar.

How to Serve It

  • Quick Bowl: Serve with your favourite chilled plant-based milk.
  • Yoghurt Parfait: Layer it with dairy-free coconut yoghurt and fresh berries. (my favourite)
  • Grab-and-Go: Keep a small jar of it in your bag for an easy, high-protein afternoon snack!
