Homemade hummus that leaves you wanting more

Prep time: 5 mins | Yield: 1 ½ cups | Plant-Based & Gluten-Free

Ingredients

 1 can (15 oz) chickpeas, drained (reserve the brine/aquafaba)

 1 tbsp smooth tahini

 ½ medium lemon, freshly juiced

 ½ tsp ground cumin

 ¼ tsp ground coriander

 ¼ tsp fine sea salt

 Chickpea brine (just enough to cover the chickpeas in the blender)

Method

1. Prep the base: Add the chickpeas to high-speed blender. Pour in reserved chickpea brine just until it barely covers the top of the beans.

2. Add the aromatics: Layer in the tahini, fresh lemon juice, cumin, ground coriander, and sea salt.

3. Blend until silky: Blend on high for 45–60 seconds until completely smooth and velvety. If it’s too thick, splash in an extra tablespoon of brine.

4. Serve: Spoon into a bowl and enjoy standard as a rich dip, dolloped over colourful grain bowls, or straight off the spoon 😉
